In Crust We Trust. Say hello to Coronato, Carrboro

This Roman-style pizzeria is a first of its kind in the South.

Who doesn’t love Pizza? Friday night? Let’s get pizza! Birthday party? Well, we need to have pizza! Late night eats? There’s always pizza! Y’all get the idea by now. There are many ways you can enjoy pizza and the newest way to experience it in the Triangle is by checking out Coronato, a new Roman-style pizzeria in Carrboro, NC.

Chef Teddy Diggs (former chef at Il Palio) launched Coronato Pizza last week in Carrboro, NC and we got to try them out on their opening night!

What distinguishes Coronato’s pizza is the crust. The Roman-style pizza boasts a thin wood-fired crust made with naturally-fermented dough. Olive oil is added to the dough to add more weight to the crust and to give it a crispy, evenly-baked crunch.

Having tasted Chef Teddy’s pizza creations at various events previously, we were thrilled to visit Coronato on the day they opened. The availability of plenty of vegetarian options got us all the more excited.

Chef Teddy’s passion for the pizza craft is evident not just in the intriguing, well-researched menu, but also in the eccentric flavors of the dishes. The menu is largely inspired by pizzas and snacks native to Rome but, the ingredients are sourced locally from farmers in the NC area.

To whet our appetites, we started off with the fried dough knots, suppli, and the fava falafel. But tonight was all about the pizza and the two beauties we ordered arrived hot and fresh out of the oven. The Il Verde and the Funghi pizza disappeared quickly into our tummies but not before we snapped a few “cheesy” pictures! The love and effort that Chef Teddy put into that dough was evident from the thin, crisp texture which served as the perfect canvas for those quirky but delish toppings.

There are also local beers and spirits on the menu, along with some Italian wines. Chef Teddy has also partnered with Videri Chocolate Factory, a bean-to-bar chocolate factory in downtown Raleigh to offer Videri Chocolate Bar on Coronato’s desserts. There are some bars of chocolates that are coated with edible 24 karat gold leaf. If you are the lucky one to unwrap a gold bar, you get a pizza on the house for your next visit!
